 The Olive Oil is the only One Oil made with a pure Fruit Juice. The different Steps to get Olive Oil  from Olives have been the same since so many centuries.
 The Mill Jean-Marie CORNILLE is a great specialist in "Black taste" Olive Oil  Production with ripe olives. Five steps are necessary to make this kind of Olive Oil :

End of October, storing Olives without Air During 2 or 3 days to mature them
Crushing Olives with Cores, then malaxing to get an homogeneous paste
Pressing or Extracting Liquid part from Paste
Separating Oil and Water 
Conserving after decantation, tasting and making assemblies
