• End of October, storing Olives without Air During 2 or 3 days to mature them • Crushing Olives with Cores, then malaxing to get an homogeneous paste • Pressing or Extracting Liquid part from Paste • Separating Oil and Water • Conserving after decantation, tasting and making assemblies
