In glass jar, pasteurized. Shelf life : 2 years.
Ingredients: "Beruguettes" or "Salonenque" varieties of green olives, fennel, water, salt and citric acid.

Production: The harvest starts in October, so before full maturity of the olives. The olive skins are "bruised", a tradition technique using stones to break the skin lightly. This procedure allows the water to penetrate more easily into the flesh of the olives. The olives are then allowed to soak in fresh water for 10 days, or until the bitterness has dissappeared completely. The olives are then put in a brine of water, salt and fennel.

Character : The olives have a rather firm consistency with a distinct taste of fennel.

Serving suggestions : Perfect for appetizers, but will also suit your Mediterranean style cuisine, such as a tajine, Lemon Chicken, Lamb stew etc.
